With Thanksgiving right around the corner, we've got one thing on our minds: turkey! One of the most important characteristics of a delicious Thanksgiving turkey is moistness, but if you're anything like me, then that's not always the result. Sometimes, an evenly moist bird is difficult to achieve, and your guests won't be satisfied with dried-out turkey breasts or thighs. In the video below, courtesy of Martha Stewart, you'll learn a brilliant solution to this common kitchen problem. The trick is to roast your turkey upside down.
Also, instead of putting a rack in the bottom of the roasting pan, this technique uses buttered bread. The bread (ciabatta bread or rustic Italian loaf) is soft and won't damage the breast meat or skin on top of the bird. Plus, the butter will melt down in the pan and provide the turkey with tasty basting juices.
By cooking the bird upside down on the bread, the result is deliciously moist light meat and thoroughly cooked dark meat.
Watch the video below for a step-by-step tutorial. I can't wait to try this technique. How about you?
